(Natural sweetener, no sugar)

Yields approx 1 1/2 cookies

Ingredients: 1 cup organic coconut oil

1/3 cup molasses

1/2 cup maple syrup

2 flax eggs (2 tbsp ground flax, 4 tbsp water) 4 cups freshly ground spelt berries (Generally spelt and flour are a 1:1 substitute but adjust if needed) 1 tsp baking soda

Spices 1 tsp ground cloves

2 tsp cinnamon

2 tbsp ground ginger

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit
  2. In a small bowl, start by mixing your flax egg together and set aside.
  3. In a mixing bowl, mix together coconut oil, molasses, and maple syrup then add your flax eggs once it’s congealed.
  4. Add your flour, baking soda and spices and mix until it becomes a thick cookie consistency
  5. Using a 1/4 cup measure, drop cookies on a parchment-lined cookie sheet.
  6. Bake for 10 to 12 minutes. If you want a softer cookie, bake for 9-10 and let cool completely. If you want a crispier cookie, bake for full 12 minutes.
